Weekend Things

This weekend, I took advantage of an open calendar by sleeping in, wearing pajamas well in to the afternoon, eating delicious brunches and reading. Sometimes a lazy weekend is all that is needed to cure a few stressful weeks.

Hearty Veggie Stew

Soup is one of my favorite foods, especially in the winter. Very few dishes are as comforting as a warm bowl of soup when it’s cold. Soup can be both fulfilling and healthy, and that’s exactly what I wanted when I hunted down this veggie stew recipe. I used this recipe and made some changes to it. This recipe is also tasty.

I chopped red potatoes and added them to low sodium vegetable broth with red lentils.

I added other vegetables like kidney beans, green chiles and corn, and spices including cumin, red chili and oregano.

The corn and green chili give the dish Mexican flavor, inspired by my love of tortilla soup. I topped the stew with one of my favorite soup garnishes – avocado. I finished with salt, pepper and parmesan.

The vegetable stew was exactly what I was looking for. Warm, soothing, flavorful and hearty without feeling too heavy or unhealthy.
