Navy, Forest Green and Leopard

We spent the weekend in Las Vegas for my boyfriend’s birthday. While Vegas is not my favorite place (I prefer a low-key Palm Springs or Santa Barbara), I loved that we were able to get a large group of our friends to join us for the trip. It felt like a true celebration and allowed all of us to spend quality time together. One of the highlights of the trip was actually the five hour packed car ride coming back. We easily entertained ourselves, laughing hard for at least half the drive home.
I got these shoes a couple of months ago and have worn them incessantly ever since. The wearable low heel, classic round toe shape and neutral leopard print have me reaching for them nearly every time I open my closet. They are easily one of the best purchases I’ve made recently.

Kale and Cranberry Salad

I’ve been on a salad kick lately. Maybe it’s the “new year, new you” mind-set or simply that my body is craving light and healthy foods after an excessive amount of rich dishes (read: desserts and other sweet treats) during the holiday season. Either way, salads have been my go to as of late. This kale and cranberry salad is one of my favorites.

While I adore a good salad, I rarely find them filling enough to stand alone. A kitchen experiment (mixing of foods I had at the time) lead me to this combination of ingredients which always leave me feeling fulfilled. I add farro, a hearty grain to the base to make the salad more substantial.

Feta gives the salad a salty flavor, while the cranberries offer a bit of sweet. Besides contrasting flavors, the two ingredients give the dish a variety of color, creating a pretty presentation.

Occasionally  I top the salad with walnuts for some crunch and extra protein. For the dressing I mix a tablespoon of olive oil with a few teaspoons of dijon mustard, a few tablespoons of red wine vinegar, salt and pepper.

Slinky Black and White

Instead of taking advantage of the holiday weekend by going on a trip or filling my calendar with events, I made myself free. It was a relaxing low-key weekend. I walked down the street to some of my favorite shops, went hiking and tonight I’m looking forward to a dinner and movie date night. The weather has been amazing and I’ve been getting out and enjoying the warm afternoon sun as much as possible.
